What is Lactic Acid?
Lactic Acid also known as milk acid is a chemical compound. Lactic acid is primarily found in sour milk products, such as: koumiss, leban, yogurt, kefir and some cottage cheeses. The casein in fermented milk is coagulated (curdled) by lactic acid. [1]
Lactic Acid Can be Synthetic
"Synthetic lactic acid is also used as a food preservative, in some foods." [2]
