What is Mustard Oil?
Mustard oil can refer to two different oils that are made from mustard seeds. The two oils are, a fatty vegetable oil resulting from pressing the seeds and an essential oil resulting from grinding the seeds, mixing them with water, and extracting the resulting volatile oil by distillation. [1]
Artificial Mustard Oil
The pungent taste of Mustard oil is from Allyl isothiocyanate. It can be produced synthetically, sometimes known as synthetic mustard oil. [1]
Mustard oil has high levels of both alpha-linolenic acid and erucic acid. Based on studies done on laboratory animals in the early 1970s, erucic acid appears to have toxic effects on the heart at high enough doses. While no negative health effects of any exposure to erucic acid have been documented in humans, publication of those studies led to governments worldwide moving away from oils with high levels of erucic acid.
