What is Shortening?
Shortening can be any solid fat from plants or animals.
Originally, it was mainly used as a synonym to lard, and with the invention of margarine by French chemist Hippolyte Mège-Mouriès in 1869, margarine also came to be included in the term. However, since invention of hydrogenated vegetable oil in the early 20th century, "shortening" has come to almost exclusively mean hydrogenated vegetable oil. [1]
